Emma's Salad


I'm not even sure if I should include this "recipe" in my Great Recipe Challenge of 2012! This is a pretty simple salad that my mom calls "Emma's Salad" because my friend Emma brought it to her house once for dinner. It's fairly generic, but I'll give Emma the credit since it is frequently her contribution to dinner parties and potlucks. In any case, I'm blogging about it now, since we brought not one, but two versions of it at Easter this year. My mom couldn't decide if she wanted feta or mozzarella, so we did both and had two separate salads!

All measurements are approximate, since each iteration of the salad comes out well without having to overthink things! The best thing about the salad is that it's easy to scale up since most of the ingredients come pre-packaged in the indicated sizes!

Emma's Salad

1 pound baby spinach or mixed greens
1 pint grape or cherry tomatoes (halved if using cherry)
2-3 avocados, cubed
8 oz sliced white button or crimini mushrooms
6 oz crumbled feta cheese or mozzarella balls
generous pour of olive oil
generous pour of balsamic vinegar
salt and pepper to taste

Directions:
Toss ingredients together in salad bowl. Serve.
