Faux Shamrock Shake


Um, yeah. THIS happened.  I was playing around with the idea if healthier versions if the Shamrock Shake. A bit of Googling gave me a bunch of recipes that seemed all too complicated. I thought I could come up with a quick and easy version.


Well, here you have it! The results of my experimentation.  Unlike most of my culinary endeavors, I didn't base this off any existing recipe. I was flying completely by the seat of my pants, based on what I had in the kitchen:


After twiddling with the proportions a bit, here's the final version of the recipe. Obviously, it should be able to scale easily.

Herban Foodie Shamrock Shake
1/2 frozen banana
3 cups Greek yogurt
1 cup spinach
Maple syrup to taste, ~1 Tbsp
Peppermint extract to taste, ~1/4 tsp

Blend together until uniform.  Yields 3 1-cup servings.

The proportions can be adjusted to taste, but here's what I found:

1/2 banana + 1 cup yogurt made it too banana-y. I wanted it to be more minty, so I upped the yogurt to cut the banana content.  

Don't add too much peppermint extract, or it gets too bitter!  This is another reason why I added so much extra yogurt.

I only used enough maple syrup to cut the tartness of the yogurt. Depending on how much you like the taste of plain Greek yogurt, you can increase or decrease this amount.

Oh, and in case your wondering, I put the leftovers back in the tub and stuck it in the fridge. I'll report back how it is as an ice cream.....
