MimicCreme

MimicCreme is a pretty amazing product that can be used just about anywhere heavy cream is needed. It is a non-dairy, non-soy, gluten free vegan cream substitute made from almonds and cashews. Surprisingly, it has the right taste and consistency as real cream, and we’ve been able to incorporate it into recipes with no problems! I think it’s great because it helps accommodate not only vegans, but also anyone who is either lactose intolerant or has a milk allergy.

So far we’ve used it as a straight substitution for heavy cream in our one of our truffle recipes, as well as in making green bean casseroles. and vegan ice cream (using the sweetened version). I personally have been very impressed with how easy it is just to do a direct sub for it in recipes! It definitely makes veganizing recipes much easier!

The only down-side to this product is that it’s relatively hard to find in stores. They have a listing of all their Retail Locations where you can find their product, but unless you’re very lucky to have one of these stores close to you, the easiest way is to order it online.
